Chicken and Wild Rice Salad2 cups cooked chicken, diced 6 oz. wild rice and long grain mixture 1/4 c. green pepper, chopped 2 Tblsp. pimento, chopped 1/2 c. mayonnaise 2 Tblsp. Russian dressing 1 Tblsp. lemon juice 2 avacados Cook rice, cool. Add chicken, green pepper and pimento. Combine mayonnaise, salad dressing, lemon juice and salt. Add to rice mixture and toss gently.
